EHS observed sanitizing bucket near broiler hood with insufficient sanitizer levels.
Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be:
Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n);
EHS advised PIC to ensure all sanitizer buckets are maintained at the correct concentration.

EHS observed clean food storage containers and baking sheets wet stacked. Violation: equipment and utensils shall be air dried or adequately drained prior to contact with food and shall not be cloth dried. CA: PIC had all containers rewashed and allowed to dry.
