Observed mechanical hot water sanitizing dish machine not meeting minimum 160F degree wash temp or 180F sanitizing temp; temperature gauge on the dish machine reading below 100F, inspector temperature indicator strip did not change color, facility has a thermometer for temp verification purposes and it is not working. CA: Discussed with PIC. Dish machine had been used that morning and temp logs have not been completed since 10/7/24. PIC to submit a work order for repairs. The three compartment sink must be used for all ware washing until the dish machine is repaired and re-checked by the health department.

Observed multiple pans of cold Time and Temperature Control for Safety foods held on Time as a Public Health Control not labelled with start/discard time or start temperature; PIC stated that they only label the hot, cooked food. CA: Instructed PIC that once food, whether it is hot or cold, is moved from temperature control to Time as a Public Health Control, each pan must be labelled with a start/discard time and a start temperature. These labels can be on a log sheet if the log sheet is stored on the holding equipment the food is stored in. PIC immediately had employees label all foods held on Time as a Public Health Control.
