Observed cans of tomato sauce stored on dry stock shelving with large dents and damage to hermetic seal. CA: Canned food items cannot have large dents in body of can or any dents/knicks in hermetic seal. COS: PIC removed cans from shelf and placed in designated area.

Observed raw bacon stored above bread in RIC. CA: All raw and RTE foods must be stored in order of minimum internal cook temp. COS: PIC reorganized RIC in accordance to minimum internal cook temp.

Observed several prep line coolers with multiple pans of food stored uncovered, and a bulk sauce container in WIC stored uncovered. CA: Food should be stored covered, unless actively cooling, to prevent possible contamination from overhead. COS: Cooler lids were placed back on prep line coolers.

Observed front of house employee ladle soup and add garnish to soup with no hair restraint. CA: Hair restraints must be worn by any employee doing food handling or prep, including plating of food.

Observed potentially hazardous TCS foods (Calamari and Beef filets) not allowed to cool properly. Both food items were packaged and sealed without having the proper amount of time to cool before being sealed. CA: PIC stated that food items had been out of temp for less than 4 hours. Instructed PIC to slight lift the lids of the containers to allow air flow inside of container to help cool the TCS foods within the correct time parameter.

Observed raw beef tenderloin stored over an open box of bread in the prep kitchen reach in cooler; the raw beef was actively dripping on the bread. CA: PIC immediately moved the tenderloin and discarded the contaminated bread.
