Observed potentially hazardous TCS foods improperly cold holding above 41 degrees F. CA: Discussed with PIC, items were not able to cool within proper cooling time parameters and were discarded.

Observed multiple TCS food items not holding 41 F or below in walk in cooler. (shredded chicken 48 F, shredded chicken 47 F, cooked shredded steak 48 F, tomato slices 49 F, tomato slices 49 F, cheeses 46F, 47 F, 47 F and 48 F, all sauces ranged between 47-48F ) CA: PIC discarded all TCS food items out of temp longer than 4 hrs. PIC has put in maintenance request for walk in cooler. Will check cooler in PM.

Observed multiple time/temperature control for safety (TCS) foods holding above 41 degrees Fahrenheit on prep top cooler (cucumber- 48F; lettuce- 47F; tomatoes- 45F; white American cheese- 52F; provolone- 50F; see temperature chart). CA: Items had been holding on prep top cooler for less than 4 hours. PIC immediately moved items to walk-in cooler to rapidly cool. PIC will call technician to determine if prep top cooler needs to be serviced.
