Observed employee cell phones stored on prep top surfaces. CA: Employee personal items shall be stored in a designated area in order to prevent potential contamination of facility food or equipment. COS: PIC relocated cell phones.

Observed employee personal drinks stored in the kitchen with no lid and straw and stored above clean linens. CA: Employee personal drinks stored in the kitchen shall be in a clean single use cup with a lid and straw and handled to prevent contamination. Personal drinks should be stored separately from food, single-use items, equipment, and clean linens. COS: Lids and straws were added to cups and PIC moved drink to the bottom shelf below the clean linens.

Observed ice bins and pitchers of espresso not in use and left open with no cover. CA: Food shall be stored covered to prevent overheard contamination. COS: All food was covered.

Observed several employees working with food while wearing bracelets. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: Bracelets were removed.

Observed several employees with painted nails working with food and not wearing gloves. CA: Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food.

Observed wiping cloths in use for wiping espresso grounds from scoops in between uses. Dry towels soiled with espresso were left at the espresso machine in between using them to wipe utensils. CA: Dry wiping cloths may be used for wiping food spills from tableware but must be maintained dry and used for no other purpose. COS: PIC moved towels to the soiled bin. Discussed using a clean, single use paper towel to wipe the espresso scoop in between uses.

Observed several employees working with food without proper hair restraints upon entering facility. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch COS: PIC had staff put on proper restraints before continuing to work
