Observed jug of milk dated for opening 10/9/25, for disposition 10/15/25 in RIC. CA: Open/prepped food should be held for no longer than 7 days. COS: Milk was discarded.

Observed bulk ice machine not cleaned at a frequency necessary to maintain food contact surfaces clean to sight and touch; lid and internal flap had visible residue. CA: Employee immediately cleaned the ice machine. Instructed PIC and employee that the lid must be sanitized at least once a day and the flap must be sanitized at least once a week.

Observed multiple open and in-use gallons of milk labelled with a manufacturer's expiration date of 1/7/2024. CA: PIC immediately discarded the out of date milk.

Observed raw ground beef thawing in standing water in the meat prep sink. CA: Instructed PIC that frozen foods thawed in water must be under cold, running water. PIC immediately placed the ground beef under cold, running water.

Observed potentially hazardous TCS food (cooked grits) not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Grits began cooling at 9:45am, at 11:30am were 90 degrees Fahrenheit in the walk-in cooler. Grits were moved to an ice bath and at 11:45am and were 80 degrees Fahrenheit. CA: PIC discarded grits. Discussed proper methods of cooling.

Observed potentially hazardous TCS food (diced tomatoes) in the reach-in cooler that had not been labelled with an expiration date. Tomatoes had white, mold-like growth. CA: Discussed with PIC. Tomatoes were prepped two days prior and were discarded.
