Observed bulk container of sugar located in dry storage stored without a lid. CA: Food must be stored covered unless actively cooling. COS: PIC placed lid on sugar container.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed processed ready-to-eat, potentially hazardous food held more than 24 hours not properly date marked after opening. CA: TCS food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded for a maximum of 7 days. COS: PIC said milk was opened today and milk was dated.
14B - utensils, equipment and linens: properly stored, dried, handled
Observed ice buckets not inverted to prevent contamination. CA: Utensils must be stored covered or inverted to prevent possible contamination. COS: PIC inverted ice buckets.
