The dish racks were stored on the floor. All equipment, including dish racks must be stored at least 6 inches off of the floor.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Multiple spatulas were damaged. Discard torn spatulas.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(j) - mechanical warewashing, wash solution temperature (pf)
The dishwasher was cycle was below the required temperature for spray type machines with hot water sanitizer. The dish machine must be repaired or it must be replaced to provide adequate pressure and hot water or converted to a chemical dispenser.
