6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
OBserved cooked rice in the Walk in cooler at 108*F at 130pm. Rice was cooked and moved to cooler at 10:00am. Advised PIC that TCS food must be cooled from 135 to 70 within 2 hours and from 70 to 41 within an additional 4 hours. PIC discarded rice.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed handwashing sink with non food items blocking the sink, (can of cooking spray, cups, etc.). Handwashing sinks must be maintained so that they are accessible at all times for employee use. PIC moved items from sink and stored items properly.
