High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. rice x 2 started at 1400 (80F - Cooling) 1550 immediately asked person in charge to place rice in ice bath to rapidly chill past 70F. Pans were uncovered 2 inch deep and on speed rack no obvious indications why cooling was not being met. Retested rice at 69F-70F by 1600. Corrected On-Site
