Cut lettuce (54F - Cold Holding); cut tomatoes (50F - Cold Holding); mozzarella (50F - Cold Holding); feta (50F - Cold Holding); cooked sausage (50F - Cold Holding); cooked ground beef (50F - Cold Holding) Reach in deli cooler used for prepping salads had ambient temperature of 54F. Operator said it had ambient temperature of 37F at 6 this morning, but was busy prepping and didn't check it again. The cooler had been in use all day, once we closed it it began cooling.
