High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 2 door cooler- cheese (55F - Cold Holding); cut lettuce (55F - Cold Holding) cold holding for 1.5 hours. Manager emptied cooler. And moved to rapid chill. Now at 43f. ham (54F - Cold Holding); cooked eggs (52F - Cold Holding) 2nd temp, ham 40f. Eggs 38f In walk in cooler. Manager was able to provide proof of temperatures at 38f 2 hours ago. Items were moved to freezer to rapid chill. Corrected On-Site
