High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Fish, chicken, shrimp, fish in right sided drawer on cook line at 48-50F. Person in charge began icing items down. In walk in cooler refried beans, chicken, queso, queso 44-46F. Ambient temperature of unit 43F during inspection. Observed door cracked open during inspection. Person in charge opened freezer door to rapidly cool. Repeat Violation Admin Complaint - From follow-up inspection 2026-06-11: In reach in cooler and walk in cooler flautas made 6.9.26 at 45-46F. Person in charge states were in unit less than 2 hours. Moved to walk in freezer to rapidly chill. Other items in reach in cooler on ice at 38-40F. Items in walk in cooler pico, chicken, at 37-43F. Admin Complaint Corrective Action Taken

Observed employee handle raw chorizo with gloves hands, then handle ready to eat bread without hand wash. Person in charge discarded bread, had employee remove gloves and wash hands, Also, observed second employee handle raw pork with gloves hands, then handle clean squeeze bottles.
