High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In the walk in cooler, observed raw chicken placed on top of containers of cooked beef. In the stand alone reach in cooler across from the back door, observed raw beef on top of ready to eat sauces. Operator rearranged all food for proper storage. Corrected On-Site

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler facing the walk in, observed cut tomato mixture (58F - Cold Holding). Operator stated foods food was out for two hours prior to inspection. Operator placed foods on ice. Corrective Action Taken

Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. In the walk in cooler, observed cooked beef and cooked rice without a date mark, operator stated foods were cooked three days prior to inspection. Discussed with operator the importance of date marking time-temperature control for safety foods.

Basic - Time/temperature control for safety food thawed in an improper manner. Observed a bucket of raw fish being thawed in standing water. Discussed with operator best methods of thawing is in cold running water or under refrigeration. Operator moved raw fish to the walk in cooler. Corrective Action Taken
