Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed at bar, ice machine with black mold like substance on ice shield.

Basic - Buildup of food debris/soil residue on equipment door handles. Observed on make line in kitchen, back sides of reach in coolers on handles with food debris on them.

Basic - Cutting board has cut marks and is no longer cleanable. Observed cutting boards in kitchen with groove marks on them.

Basic - Employee with no hair restraint while engaging in food preparation. Observed in kitchen, food prep employee without hair restraint. Observed employee put on hair restraint. Corrected On-Site

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed on make line, reach in coolers, gaskets soiled.

Basic - Time/temperature control for safety food thawed in an improper manner. Observed fish in cases put out to thaw on sink, not under running water.

Basic - Wet mop not stored in a manner to allow the mop to dry. Observed mop in mop bucket with mop head down. Observed operator remove and store mop head up. Corrected On-Site

High Priority - Copper or copper alloys in contact with foods with a pH below 6. Observed 3 copper mule cups with out lining inside cup. Observed bartender throwing away cups after being educated. Corrected On-Site

High Priority - Dented/rusted cans present. See stop sale. Observed one dented can of Chili Beans, 27oz Bushes Best on dry storage shelf.

Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed inside top of microwave with food splatter/ debris

Intermediate - Handwash sink used for purposes other than handwashing. Observed both hand washing sinks in bar being used as dump sinks with colanders inside them. Observed bartender removing colanders out of hand washing sinks and was educated on proper procedures. Corrected On-Site
