Observed a carton of heavy whipping cream with no date inside of a reach in cooler on the cook line. The operator was unable the date of opening. The operator voluntarily discarded the whipping cream. Corrected On-Site

Intermediate - Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed multiple raw foods, cooked foods, and soft cheese packaged using the reduced oxygen method. The operator removed all foods from the packaging. The operator was emailed HACCP information.
