Chef removed excess above fill line and moved to reach-in cooler below. #2: sprouts (73°F - Cold Holding); cooked garlic (71°F - Cold Holding) Observed sprouts being held at room temperature. Operator states less than 2 hours and that she keeps items on time. Operator does not have time mark nor TPHC form. I emailed operator the form to print and fill out. Sanitizer Bucket (Chlorine 200+ppm) Operator emptied most of solution and diluted by adding more water. Retested at 50ppm. Corrected On-Site
