High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 00ppm). Observed gallon of sanitizer with a different color of chemical, manager removed and changed for a new sanitizer gallon. After 3er, attempt- Chlorine sanitizer at 100 ppm. Corrected On-Site

High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. raw shell eggs (61F - Cold Holding). Per manager eggs on serving cart less than one hour, employee placed back inside walk in cooler, until customer arrives. Corrective Action Taken
