High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In flip top cooler on cook line, cut watermelon (60F - Cold Holding). Employee stated held less than two hours. Employee moved to bottom cooler.

Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Two other people have manager certification but not present.

Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In walk in cooler, raw Mahi, tuna, salmon not removed from reduced oxygen package. Operator stated thawed less than three hours. Employee started to remove fish from package.
