Observed chicken wings (45-46°F - Cooling) at 3:34pm. Per operator, made yesterday. Advised operator to cook off raw animal proteins. 2.) Observed salsa (73°F - Cooling) at 3:23pm. Per operator, now Retest at 3:49pm at 71°F. Observed pans filled high and sitting at room temperature. Operator transferred to cooler to rapid chill. Corrective action taken.
