Observed at flip-top coolers 1 and 2 chopped lettuce (50 - Cold Holding); Swiss cheese (50 - Cold Holding); sliced Tomatoes (50 - Cold Holding); sautéed onions (50 - Cold Holding); flip-top 2 - hard boiled eggs (50 - Cold Holding); shredded chicken (56 - Cold Holding) Per operator hard boiled eggs, sliced tomatoes, cooked onion, Swiss cheese stored in the unit since yesterday. All products not prepared or portioned today. Operator discarded products from yesterday, rest of the products stored approximately 2 hours, moved to walk-in cooler.
