Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed Sanitizer Bucket at Quaternary of 100ppm. PIC remade to 200 ppm of Quaternary. Corrected On-Site

Intermediate - Manager or person in charge lacking proof of food manager certification. Operator present on site stated they are manager, lacking certification, no food handler course available. Employee was hired back in December of 2020. V. Carreon is reviewing book and preparing to take test.

Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed macaroni and quinoa on line observed under time with time marking but no written plan available. Provided operator with procedure and operator filled out according to current parameters.
