High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed : on the kitchen pizza speed rack: pizzas made with no tracking timer. Cheese pizzas made at 11 am and pepperoni pizzas made at 11:30 am. Timers were started with the understanding that at the end of the original time made 4 hours, pizzas would be discarded. Corrected On-Site

Observed : pizza Maker B, lacks any training certificate, and the Employee Reporting form has not been filled out. emailed a blank copy.
