The following items and cold holding temperatures in the Walk-in Cooler: COLD HOLDING Chicken 50F - 38F 30 minutes later; hot dogs 54F- 40 F - 30 minutes later; items were on rolling rack and been taken out of walk-in-cooler for a 30 minutes.
