TCS foods must be cold held at 41°F or less. Salsa on counter at 72°F. Salsa discarded.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Insufficient lighting in kitchen. Repair broken light fixtures.
