Observed sliced cheese, lettuce, tomatoes, and other items with discard labels reading to discard product on 2/4 at 9:55 am. I temped the items at 9:50 and they were in temperature. I then saw an employee change the labels without discarding the product after the 4 hour time limit. Do not replace the label when time runs out. Ensure to discard food then replace it with a new batch of tomatoes, lettuce, and other items and only then add a new label for that food product with the four hour time frame.

Observed dish machine not reaching minimum sanitization temperature of 160F plate level. I tested the dish machine temperature three times and each time it read at 139F PL. Maximum temperature reached was 139F PL. Informed person in charge to discontinued use until dish machine and switch to 3-compartment sink method until the dish machine is repaired and I confirm it is reading a minimum of 160F PL.
