6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed left prep top cooler and bottom reach in coolers not in temperature to cold hold. PTC: Tomato (48F), Lettuce (46F), and Cheese (43F). RIC: Raw chicken (43F) Ham (47F) ,and Raw beef (45F). Informed CFSM about cold holding temperatures and moved items to the WIC.
12A - contamination prevented during food preparation, storage, display

Observed a couple of food items in WIC on floor from delivery. Make sure to put food items up and 6 inches off of the floor. Do not let food items sit on floor for hours after delivery to prevent food contamination.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
Observed inspection report not posted five feet away from primary entrance. Make sure inspection report is close to main entrance so customers can view it.
