Observed food handler moving containers then donning on gloves without prior handwashing. Ensure all food handlers wash hands in between tasks and prior to donning on gloves.

6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS cold holding food items not in temperature of 41F or below. Prep-top cooler: Lettuce at 44F prepped on 6/10, Turkey ham at 43F prepped on 6//9, Reach-in cooler: Queso 44F, Cheese 45F, and Hot dogs 44F. Ensure all cold holding items are 41F or below. Person-in charge moved all items to walk-in cooler. I will be back in a week to confirm reach-in coolers and prep-top coolers are cold holding at 41F or below.
