Chips, tortillas, shells, rice, beans, salsa, and food on prep line not covered while not in use. All foods must be covered while not in use or while stored. Cover all foods in prep line and close PTC when not in use.
4-2B - food-contact surfaces: cleaned & sanitized

Observed can opener with accumulation. Clean can opener after each use.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employees w/o beard restraint or hair restraint while handling food. All employees handling food must wear hair restraints.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(a) - plumbing system, approved (p)
Bar hoses not connected to drain and draining into plastic bucket. Connect to drain.
14D - gloves used properly
Regulation: 511-6-1.04(4)(n)2,3,4 - gloves, use limitations, slash resistant gloves & cloth gloves (c)
Observed employee handling raw meat and go to dry storage to get sauce container w/o removing gloves or changing gloves and washing hands. Remove and wash hands when changing gloves.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Equipment, coolers, and shelves need more frequent cleaning to remove built up debris, splatter and grease.
