4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed heavily accumulated debris on bottom of two vegetable slicers. Equipment shall be cleaned to sight and touch. Equipment should be properly broken down to ensure it is able to be cleaned thoroughly.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(3)(g) - food tmd, provided and accessible; appropriate tmd for measuring thin foods (pf)
No temperature measuring device on site. Temperature measuring devices must be provided to accurately measure food temperatures.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observe no hot water at handsink by prep top cooler in the front area. There needs to be sufficient hot water to meet demands. Restore hot water to sink within 72 hours. Use other hand sink until hot water is restored at the front sink.
