Observed several containers of coleslaw in the WIC with no dating or labeling. CA: Date and Label all TCS foods stored outside of original packaging.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed boxes of food in the dry storage area, WIC and WIF on the ground. CA: Store all food and food items on shelves at least 6 inches off the ground.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed a cell phone being stored on the food prep table right next to chicken being prepared. CA: Store all employee belongings in a designated area away from food prep to prevent contamination.
