Observed no sanitizer being dispensed into to sanitizing compartment of sink. Helped PIC troubleshoot to see what the issue could be--still no sanitizer. Remade fresh water and added sanitizer to reach appropriate concentration, approx. 1/2c.

PIC poured out all buckets and refilled with fresh sanitizing solution.

Observed ice machine with growth behind the deflector. Equipment food-contact surfaces and utensils shall be cleaned:

(iv) In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment:

(I) At a frequency specified by the manufacturer; or

(II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

Ice machine should be taken out of service and cleaned thoroughly. Suggest checking it on a routine basis to ensure that growth does not occur.

Observed not test strips being used by way of no sanitizer being fed.

Reminded PIC that sanitization levels should be checked each time sanitizing solution is made.
