Observed uncovered tater tots, onion rings, fries, shrimp, chicken, and other food items stored in RIF. All food items must be stored covered to protect against contamination. Provide lids for all uncovered items.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed prepped vegetables, boiled eggs, pasta salad, ham chunks, and cheese in walk in cooler with no form of date marking. Also observed steak stored in RIC with no form of date marking. Prepared foods must be marked with date of preparation or date of disposal. Date mark or dispose unmarked items.
