Observed ice cream mix that was stored in reach in cooler below the ice cream machine to be holding at a temperature of 53F. Ice cream mix contains dairy/milk and must be held at a temperature of 41F or lower. Out of temperature mix was pulled, disposed, and replaced with in temperature mix (36.5F). Ice cream machine had previously been in "standby" mode; thereby, allowing the 41F threshold to be exceeded. Ice cream machine was turned back on and temperatures began dropping. If was advised that ice cream machines should be completely broken down and cleaned regularly and that if in "standby" mode, all ice cream mix should be removed, placed in walk in cooler, and all lines flushed to remove any and all dairy products that may be at risk for exceeding 41F when in standby mode. An additional follow-up inspection to be conducted on Tuesday, 7/30/24, to verify temperatures and cleaning processes.
