Observed prepped food items (i.e., chicken, rice, diced vegetables, etc.) stored in reach in coolers throughout main kitchen with no form of date marking. TCS items must be properly date marked and used or disposed according to date.

Observed flour and sugar stored in large storage containers with no form of labeling. Once removed from original packaging, ingredients must be labeled with common name of food item. Label containers.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(2)(j) - heating, ventilation, air conditioning, system vents, designed to prevent contamination (c)
Observed black, organic buildup on air vents/returns throughout dining area. Advised deep cleaning.
