Observed slimy, organic build up on ice shield of ice machine. Ensure food contact surfaces are cleaned at a frequency to prevent buildup. Clean and sanitize ice machine and dispose any potentially contaminated ice.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.05(10)(b) - wiping cloths, air drying location (c)
Observed wet wiping rags stores on countertop in grill area. Wiping cloths must be stored in sanitizer solution between uses. Replace sanitizer every 4 hours - test concentration.
