Observed boxes of single service items (cups and straws) stored on floor in dry storage area. Single service items must be stored off floor in clean, dry location to prevent potential contamination or pest harboring.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed 3-compartment dish sink with no test strips for testing sanitizer concentration. Supply test strips and use regularly to ensure appropriate concentration.
