Observed pan of bacon stored in under-counter grill drawer with a discard date of 7 days for 3/33/26, which was not discarded. CA PIC instructed to discard all items after 7 days of opening. COS PIC discarded item.

Mixed lettuce at salad prep-cooler 1 not datemarked for 7 days after prep. CA PIC instructed to datemark pans for 7 days. COS PIC datemarked pan.

Indirect connection pipe under handwashing sink near fryers not aligned to where water spills on the floor.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed prep-cooler salad 1 not holding food temps to 41F or below. PIC verified that PHF (potentially hazardous foods) prepped yesterday (3/22/26) were placed in bottom unit this morning around 10am, so items were not out of the 2 hours window. PIC will email service invoice for when unit gets serviced within 7 business days.
17C - physical facilities installed, maintained, and clean

Wet mop not hung to dry in back dry storage area.
