Observed commercially processed cheese sauce in back kitchen area prepped earlier on hot-plate not @ 135F' or higher for reheating to even begin to hot-hold.CA-PIC instructed that reheating,commercially processed foods must reach at least 135F' within 2 hours.Foods should be reheated in the steam-well and stirred/agitated throughout the 2 hours to allow for the food to reach proper temperature.
