OBSERVED TCS FOODS ON THE FAR RIGHT SIDE OF PREP LINE HELD BETWEEN 47-49 DEGREES; ALL TCS FOODS HELD COLD SHALL BE HELD AT OR BELOW 41 DEGREES; CA: PIC PUT IN WORK ORDER ON THE PREP LINE COOLER; ALL FOODS SHIFTED TO COLDER SIDE OF COOLER.
17C - physical facilities installed, maintained, and clean

OBSERVED BUILD UP AROUND THE DEEP FRYER AND COOKING EQUIPMENT AT THE FLOOR LEVEL; ALL PHYSICAL FACILITIES SHOULD BE CLEANED AT A FREQUENCY TO PRECLUDE THE BUILD UP OF FOOD SOIL AND DEBRIS; CA: PIC CLEANED THE SURFACES THAT WERE OBSERVED WITH BUILD UP
