Observed prep cooler not working properly. Discussed with CFSM the importance of maintain TCS foods at or below 41F. CA: CFSM stated food had been out less than 4 hours (opened at 6fr) and food employees moved TCS foods to other reach-in cooler during inspection and begin to adjust thermostat and defrost setting. CFSM will have unit serviced/repaired before returning to service.
