Observed front food service pre top that holds meats and cheeses measuring above 41 degrees Fahrenheit. All cold holding shall be stored at 41 degrees or lower. Prep unit needs to be repaired....replace cooling fan.

Observed Prep top and RIC are dispar does not hold temperature of 41 degrees Fahrenheit or lower. Units needs to be repaired to ensure cold hold foods will be held at proper temps.
