4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Labels left on clean plastic/metal pans. Advised PIC to remove all labels prior to washing. Equipment food-contact surfaces shall be clean to sight and touch.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Microwave dirty. Shelves holding plates/bowls dirty. Shelves under cookline with food and grease build up. Metal containers holding lids and utensils with build up. Freezer dirty in bottom with excess crumbs. Advised PIC to clean. Food and non-food contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris.
