Employee drink on prep table with no straw. Advised PIC to relocate. Employee drinks shall be stored in a designated area away from food and food contact surfaces and shall have a lid and straw so that it is handled to prevent contamination of the employees hands, the container, exposed food, clean equipment, utensils and linens, and unwrapped ss items. Half smoked cigarettes stored with clean pans/equipment. Advised PIC tobacco products shall be stored in a designated area away from food and food contact surfaces. cos--discarded
4-2B - food-contact surfaces: cleaned & sanitized
Slime mold on interior of ice machine Advised PIC to empty and clean with sanitizer solution. Equipment food contact surfaces shall be clean to sight and touch.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Pecan pie stored in cooler expired (04.06.2026). Advised PIC to discard. Time/temperature control foods that are labeled "keep refrigerated" that are for sale or service to consumer or customer shall be immediately discarded and shall not be sold, served or used after manufacturers expiration date or sell by date. cos-discarded
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Inside coolers dirty. Gaskets of coolers dirty. Inside cabinets holding plates, ss items accumulating food debris. Advised PIC to clean. Food and non-food contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Floors throughout kitchen with large number of broken, cracked and missing tiles. Advised PIC they need to be fixed or replaced. All physical facilities shall be kept in good repair so that they are not a source of contamination or hazards to employees.
