Observed packages of raw chicken stored above packages of shredded cheese in the reach in cooler. Food shall be protected from cross contamination by separating raw animal foods during storage from ready-to-eat food by arranging each type of foodo so that cross contamination of one type with another is prevented. Food to be given out today to clients in senior center and removed. Cheese relocated above chicken.

Observed no paper towels available at handwashing station at time of inspection. Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels or other approved alternative. Notified PIC, and she had napkins available in the dry storage aarea to supply until facility received paper towels.

Observed milk and cole slaw in reach in cooler holding above 41F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. Maintain cooler at proper temperature to prevent cold holding violation. Milk discarded. Cole Slaw meets time control procedure since received 2 hours previously at 37F, and will be served within 4 hours of receiving. Thermostat adjusted on cooler. PIC stated cooler will be replaced.
