- Observed no sanitizer in sanitizer compartment of 3-c sink while dishes were being washed, rinsed, and sanitized. Mechanical sanitizer dispenser no dispensing properly. PIC stated she will call company to service machine. Manually input sanitizer until mechanical dispenser is fixed. Contact Brooke at health department when fixed. -COS, PIC manually put quat sanitizer in 3-c sink to increase concentration to 100-200 ppm. Ensure employees are checking sanitizer daily before washing dishes to ensure concentration is at proper strength.
