6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed chicken bites and filets held in breading station prep top cooler at 50F. Advised PIC that cold TCS foods must be held at 41F or below. PIC discarded TCS foods stored in the affected cooler and removed cooler from service. Chicken awaiting breading will be stored in functional walk in cooler until repair can be completed.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(f),(g) - wall & ceiling coverings & coatings; wall & ceiling attachments (c)
Observed broken light fixture that was allowing condensate to collect in walk in cooler. Advised PIC that ceiling attachments such as light fixtures, must be maintained in good repair. PIC stated that light issue would be addressed with management.
