4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed old food stuck to clean dishware/utensils in main kitchen including stainless steel 2" pans. COS: All items found dirty were taken to dish area to be washed, rinsed and sanitized. Ensure all dishes are clean to site and touch before placing in kitchen to be used as clean.

Observed raw chicken on prep table an on prep top cooler work top in main kitchen after prepping of chicken was completed. COS: Raw chicken was removed and surfaces were cleaned in both location as well as sanitized. Ensure areas are clean to sight and touch after prepping raw foods to prevent cross contamination.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed floor in walk-in cooler and freezer in main kitchen in need of repair and cleaning. Floor is pieced together where cleaning is difficult. Ensure regular maintenance is completed on floors in walk-in freezer and cooler to cleaning is easier. Replace floors.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed jacket hanging on shelving in the main kitchen where clean pans are kept. COS; Jacket moved to employee area to prevent contamination. Ensure PIC tells all employees to keep jackets in employee area.
