Observed open beverage containers on a food preparation table or over/next to clean equipment/utensils in the main kitchen area. CA: Store in designated area for employee beverages. COS: Cups were discarded.

Observed a handwashing sink was being used for other purposes other than handwashing with a drink and a dish brush in the sink in main kitchen area. CA: A handwashing facility may not be used for purposes other than handwashing. Items were removed from hand sink; discussed ensuring hand sinks are only used for hand washing.

Observed reach in coolers, grill prep area, and cabinets at trash can in need of cleaning. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. All areas shall be thoroughly cleaned.

Observed containers of chili and gravy in walk-in cooler stored pass the disposal date mark. Discussed routinely checking date marks. COS: Discarded.

Observed establishment not following the requirements outlined in variance granted for hashbrowns; some containers with no labels. CA: Train/retrain employees on properly noting information on hashbrown labels. Allowed to add labels to containers.

Observed employee at grill area switch from working with raw food to ready-to-eat food without washing hands. Discussed when switching between working with raw food and working with ready-to-eat food hands shall be correctly washed.
