Regulation: 511-6-1.05(8)(a) - before use after cleaning(p)
Observed dish machine chlorine sanitizer not at proper minimum strength. CA: Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. PIC stated they believed the sanitizer bucket was the issue; sanitizer bucket tested observed to be 200ppm. COS: Use three compartment sink until dish machine is repaired. Send documentation of dish machine repair to Carly.Harper@dph.ga.gov.

Observed expired time/temperature control for safety foods (salad mix, cut spinach, cut lettuce) in walk-in cooler. CA: Time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: Items were discarded.
